Not necessarily convinced. Anyway, this dosen't seem like a simple problem to solve. At least your GF was honest from the start. No idea if I can help you, but there are some points I can see.. (which may be ovbious however)
I think there are two main reasons why people like to do baby play. 1) They like to feeling helplessness and to play in a care-free environment away from the stress of adult life. 2) They like the feeling of humiliation of being put in a shameful situation. Maybe you should try it just for the purpose of an experiment.
If you are only worried about health aspects, I guess you need advice on minimising the risks. There are ways to do this if you have the right skin care products and some precautions.
It is impossible for me to know if you will enjoy a babysitter or parent's role. Its really up to you if you can enjoy that aspect or not. If you are only there to enforce some health rules, its hard to imagine how you will be happy to continue that role.
