Same as you, I was dry from an early age. Apparently I was toilet trained completely by 2 years of age and dry at night within six months of that.
However: I have absolutely no problems in “letting go” in bed, nappies, clothing: whatever I choose and in pretty much whatever position so there must be hope for you!
Perhaps my lack of inhibition here is a function of practice: I’ve been DL/pants wetting for as long as I can remember.
My partner however suffered a similar problem to you. When we started recreational bedwetting, she had to stand in bed to get going and generally got back under the covers only after she’d wet her pants whilst standing. It was a bit awkward.
Gradually, this progressed to her being able to wet herself kneeling in bed.
Then, she was able to wet herself laying in bed with her knees drawn up.
Now, she can wet herself whilst half-awake, completely laying in bed.
Next step is that she’ll try to wet herself laying on her side “spooning”.
For her, it was a practice thing.
There’s a lot of evidence floating around (no pun intended) that its very helpful to be wet before you try to pee yourself if you're finding it difficult. You might consider going a little in your pajama pants before going to sleep. If this is uncomfortable for you, consider nappies: at least for the "training" phase.
It seems pretty clear that you'll have to retrain yourself to be completely comfortable wetting in bed before you can expect to wet it naturally.
