Some people switch roles,and some people are only comfortable with one.If you know he has no interest in ageplay I wouldn't advise trying to get him to do what you know you like but he doesn't.
I wonder if your fantasizing about him in baby role is your reaction to his not wanting to accomodate your interest?...a sort of subconscious revenge?
My own fantasies of babying a girl don't involve her "suddenly" losing bladder control,that would make me feel guilty that I was taking advantage of her...I like her slowly and deliberately losing control as she adapts to the infant role because it turns her on.
