I'm not sure about missing pics - we've actually made every one of our Monday pic posts (and Friday movie posts) to date (and also our 300 pic monthly target evey month to date). However, the update is often made very late at night, and in some European and eastern time zones it is the early hours of Tuesday morning.
Also, make sure you press "Refresh" when you visit the site on a Monday or Friday ... otherwise, you might see a cached version of the (non-updated) gallery index, and be missing out on the update :o)
